It is with much gratitude to Paul that I can report I now have functioning Paper Machines! The process for my PC was basically to do the things in the list above in the PC way (with which Paul helped me). My problems were that I had no Python and needed it installed, and also that I had two extra, older versions of Java on my computer that may have been mucking up the process and which needed to be deleted. After having another go at extracting text, I am able to make word clouds and use the features that used to be greyed out!
